Committed to biodiversity, we practice sustainable viticulture, labeled HVE1, and favor manual harvesting. Since 1989, our environmentally friendly approach has included not weeding plots. Our minimally interventionist vinification, with aging in oak barrels for 12 to 18 months, aims to create wines of exceptional flexibility, combining finesse and elegance. The rigorous selection of the grapes, the careful planning of the harvest, and the exclusive use of indigenous yeasts help to highlight the characteristic fruitiness of Chambolle.
